The Most Amazing Chocolate Cake

The most incredible chocolate cake is here. I call it my Matilda cake because I swear it is as good as the cake Bruce Bogtrotter ate at Matilda. Soft and chocolatey perfection. Here is the chocolate cake you dreamed of.

Ingredients

  • 3 cups all-purpose flour
  • 3 cups granulated sugar
  • 1 1/2 cups unsweetened cocoa powder
  • 1 tablespoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 4 large eggs
  • 1 1/2 cups buttermilk
  • 1 1/2 cups warm water
  • 1/2 cup vegetable oil
  • 2 teaspoons of vanilla extract

Chocolate Cream Cheese Cream Frosting
  • 1 1/2 cups softened butter
  • 8 oz softened cream cheese
  • 1 1/2 cups unsweetened cocoa powder
  • 3 teaspoons of vanilla extract
  • 7-8 cups powdered sugar
  • about 1/4 cup milk as needed


Instructions

  1. Preheat the oven to 350 degrees. Butter three 9-inch cake slices. Sprinkle with flour and remove the excess.
  2. Combine flour, sugar, cocoa, baking soda, baking powder and salt in a stand mixer on low speed until combined.
  3. Add eggs, buttermilk, warm water, oil and vanilla. Beat at medium speed until smooth. It should only take a few minutes.
  4. Divide the dough between the three pans. I found that it took a little more than 3 cups of dough to distribute it evenly.
  5. Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean.
  6. Let cool on racks for 15 minutes, then turn the cakes on the racks and let cool completely.
  7. Frost with your favorite frosting and enjoy!

  9. In a large bowl, beat the butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results
  10. Add cocoa powder and vanilla extract. Beat until everything is combined.
  11. Stir in powdered sugar, 1 cup at a time. Add milk if necessary to obtain a spreadable consistency. The frosting should be very thick and will thicken even more if it is refrigerated.
